Lent season is upon us which for most Catholics means we can't have meat on certain days. I'm not going to get into the religious views on this, to each their own.
This is also perfect for vegetarians, maybe not vegans because it includes cheese.
Moving on, Now these may not be auténtico Mexican pizzas, but it's what my family called them. My big sister Maritrini and my Mother would make us these "Mexican Pizzas" during lent and they were a big hit. I actually forgot about them until recently. So I made them with my girls.
What you will need:
•Bolillos (Bread, picture down below)
•Pinto Beans (whichever is your preference)
•Cheese (I used Chihuahua cheese)
Optional for toppings:
Heat up your beans until tender. Smash them. Cut the bolillo in half, and spread the beans across.
Sprinkle your cheese on them...
Pop them in the oven, I put my oven on 375 degrees.
Keep an eye on them. They are done when cheese is melted. Took about 8 minutes for me.
When they are done, you can add any desired toppings. I just put a salsa de aguacate (salsa for avacados & chiles)
